| Review: | First of all I have to say that the name of the restaurant is way too bland considering the talent of the new chef aboard. It is the signature restaurant of the Sheraton Universal Hotel, a heavy tourist hotel, that of course has to compete with Universal City Walk restaurants. Chef Urs Balmer has been in charge since September 2008, and the Swiss native has an extensive resume from places like Zurich and Klosters. More recently the James Beard winner has completed gigs in Boston and Palm Springs, and I sincerely hope he sticks around a while as his food is a bit of a revelation. Last week I checked out his OUT OF YOUR GOURD menu,an Autumn feast that started out with a creamy and delicious Butternut Squash Bisque with Creme Fraiche and Chives. This was served with a nice Sauvignon Blanc I was unfamiliar with from Groth Vineyards. More research on this one will be done. The Pumpkin Ravioli with sage brown butter and yellow squash Ratatouile,a lovely well prepared delicacy. Even better was the Braised Veal Osso with a medley of Squash Risotto and paper thin grilled asparagus. The meat just fell off the bone, and then the Pan Fried Northern Halibut in a Shallot reduction and Butternut Squash Puree and Fall Root Vegetables also showcased the chef's obvious talents. Top it off with Signature Bread Pudding and Pumpkin Ice Cream, and you have a meal that was memorable by the choice of ingredients and meticulous preparation. The room itself is also very inviting, spacious,and has excellent lighting. Curious though the the hotel web site does not even mention this talented fellows name, or his reputation in foreign climes. Strange how corporate minds work. |
